About Fuego Street Kitchen

Fuego Street Kitchen was born in 2019 when chef and founder Carlos Medina decided to bring his family's recipes to the streets. Growing up in his abuela's kitchen in Michoacan, Mexico, Carlos learned that the best food comes from simple ingredients, real technique, and a lot of heart.

Our Food

Everything on our truck is made from scratch daily. We grind our own spice blends, press our own tortillas, and slow-cook our meats overnight. We source produce from local farms whenever possible and never use frozen, pre-made, or artificial ingredients.

The Truck

Our custom-built food truck — nicknamed "La Bestia" — is equipped with a full commercial kitchen including a vertical spit for al pastor, a flat-top griddle, a deep fryer, and a wood-fired section for our signature char-grilled flavor.

Fuego is available for private events, corporate lunches, weddings, festivals, and parties. We can serve groups of 30 to 300+. Contact us for custom menus and pricing.
